Cast Iron Baked Cheesy Mashed Potatoes

You guys! If you’ve followed along our journey for any length of time, you probably know by now how much I love home cooked meals. Potatoes are at the top of my list! These mashed potatoes were definitely kid approved (and husband!).⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here is the recipe! (I made it up myself!)⠀⠀⠀⠀⠀⠀⠀⠀⠀


  • 4 extra large russet potatoes⠀⠀⠀⠀⠀⠀⠀⠀
  • half a stick of butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 cup of milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • garlic powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • salt and pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 cup of shredded cheese
  • parsley


Peel, cut into cubes, and boil potatoes until fork tender. Drain potatoes. Put into a large deep cast iron skillet. Mash potatoes and add butter, milk, garlic power, salt, and pepper. Mix in cheese. Sprinkle the top with parsley. Bake at 350 for about 15-20 minutes.
