Instant Pot Bone Broth Recipe

Ingredients:

  • 2-3 pounds of beef soup bones OR chicken necks/backs
  • 1 onion, quartered (leave the skin on for extra color)
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 2 tablespoons apple cider vinegar
  • 2 bay leaves
  • 1 teaspoon salt
  • Water (enough to cover the bones and vegetables)

Instructions:

  1. Prepare the Bones:
    • If using raw bones, roast them in the oven at 400°F (200°C) for about 30 minutes to enhance the flavor. Place them on a baking sheet lined with parchment paper.
  2. Load the Instant Pot:
    • Add the roasted bones (or raw if you prefer) to the Instant Pot.
    • Add the onion, carrots, celery, apple cider vinegar, bay leaves, and salt.
    • Pour enough water into the Instant Pot to cover the bones and vegetables, but do not exceed the max fill line.
  3. Cook the Broth
    • Secure the lid on the Instant Pot and make sure the vent is set to "Sealing."
    • Select the "Soup/Broth" setting and set the timer for 120 minutes (2 hours).
    • Allow the Instant Pot to naturally release pressure once the cooking time is complete. This can take about 30-40 minutes.
  4. Strain the Broth
    • Carefully open the Instant Pot and strain the broth through a fine-mesh sieve or cheesecloth into a large bowl to remove the bones and vegetables. Discard the solids.
  5. Cool and Store
    • Let the broth cool to room temperature. You can skim off any excess fat that rises to the top, if desired.
    • Pour the broth into glass jars or storage containers. It can be stored in the refrigerator for up to 5 days or frozen or pressure canned for longer term storage.

Usage Tips:

  • Use your homemade bone broth as a base for soups, stews, and sauces, or sip it on its own for a nutritious drink.
  • When reheating, you can add salt or seasoning to taste.
