This Beef Stroganoff recipe is a hearty and comforting dish that swaps out traditional cuts for tender stew meat. Ingredients

  • (1) Stew Meat
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Egg noodles or rice, for serving
  • Fresh parsley, chopped (optional, for garnish)

Directions


Brown the Stew Meat:

  1. In a large skillet or Dutch oven, melt 1 tablespoon of butter over medium-high heat.
  2. Add the stew meat and brown on all sides, about 5-7 minutes. Remove the meat from the skillet and set it aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the remaining tablespoon of butter.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and sliced mushrooms, and cook until the mushrooms are browned, about 5 minutes.
  4. Create the Sauce:
    • Sprinkle the flour over the sautéed vegetables and stir to coat evenly.
    • Slowly pour in the beef broth, stirring constantly to avoid lumps.
    • Add the Worcestershire sauce and bring the mixture to a simmer. Cook until the sauce has thickened, about 2-3 minutes.
  5. Cook the Meat and Combine:
    • Return the browned stew meat to the skillet.
    • Cover and reduce the heat to low. Let it simmer for 20-25 minutes, or until the meat is tender and fully cooked.
    • Stir in the sour cream, and heat gently for 2-3 minutes. Be sure not to boil the sauce to avoid curdling.
    • Season with salt and pepper to taste.
  6. Serve:
    • Serve the Beef Stroganoff over cooked egg noodles or rice.
    • Garnish with chopped fresh parsley if desired.
