Mini Meatloafs with BBQ Glaze
Ingredients:
For the Mini Meatloafs:
- 1 pound ground grass-fed beef
- 1 cup breadcrumbs
- 1 large egg
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
For the BBQ Glaze:
- 1/2 cup barbecue sauce (your favorite variety)
Instructions:
1. Preheat and Prepare:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease a muffin tin if you prefer individual mini meatloafs.
2. Mix the Meatloaf Ingredients:
- In a large bowl, combine the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, salt, pepper, and onion powder. Use your hands to gently mix the ingredients until well combined.
3. Shape the Mini Meatloafs:
- Divide the meat mixture into equal portions (usually makes about 6 mini meatloafs). Shape them into mini loaf shapes or press them into the compartments of the muffin tin if you're using one.
4. Add BBQ Glaze:
- Brush each mini meatloaf with barbecue sauce, ensuring an even coating on top.
5. Bake:
- Place the mini meatloafs on the prepared baking sheet or in the muffin tin.
- Bake in the preheated oven for approximately 25-30 minutes or until the internal temperature reaches 160°F (71°C) for beef.
